The Ko-Iga donabe in ame (toffee brown), a deep Japanese ceramic hot pot made from textured, heat-resistant clay and glaze. With a 2 litre capacity, it's ideal for cooking noodles, hot pots, stews, soups and more, and brought to the centre of the table, it makes for a communal meal with loved ones.
The donabe is one of Japan's most loved cooking tools, made from earthenware clay and perfect for stews, soups, fish and vegetable dishes, and rice. TOJIKI TONYA brings together several ceramic makers in Japan's Tokai region, with a focus on supporting local artisans carrying on generations of ceramic tradition.

Kannyu (crazing): very fine hairline cracks may appear in the glaze and on the base over time. Known as kannyu, they're a natural feature of handmade pottery made without petalite, develop the donabe's character as it ages, don't affect its use, and are appreciated within the wabi-sabi aesthetic.
Seasoning before first use (medome): to extend the life of your donabe, season it with rice water first.
- Rinse rice as usual, keeping the cloudy rinse water.
- Fill the donabe to about 80% with the rice water.
- Bring to the boil over medium heat, then simmer gently for 15 minutes, stirring occasionally.
- Turn off the heat and let it cool naturally to near room temperature, then discard the water.
- Wipe with a clean cloth and leave to air dry completely, at least overnight, before using or storing.
