Product Description

Azmaya works in close collaboration with artisans, craftsman, and local small-scale manufacturers within Japan to produce high quality contemporary items that celebrate local materials, traditional Japanese handcrafts, and regional techniques.

The Iga Yukihara Pot is an Iga ware ceramic piece which has exceptional heat conduction, and a side handle to easily transport dishes from the kitchen to dining table. It is great for daily use when preparing and serving noodle soups, soups, rice porridge, and many other simmered dishes.

Each pot is handcrafted by Japanese potters using local clay following traditional Iga ware ceramic techniques. The history of Iga ware (or Iga-yaki) has a long history which dates back to the Nara period (710-794), and originates within Iga of Mie prefecture. This area has long produced a clay highly regarded for its high resistance to fire – making it ideal for regular use in the kitchen.

Made in Japan.

Materials: Iga clay, Lime glaze

Holds approximately 1,500ml.

Measurements: Approximately 26.5 x 18.5 x H14cm

To extend the life of your donabe we recommend seasoning it with the 'medome' process before use.

Use Rice Water as a seasoning (Before First Use)
  1. Rice should be rinsed as usual. Add rice (I use two rice cooker cups here) to a big bowl and gently knead the rice between your fingers under running water. The rice water should not be discarded during this seasoning process.
  2. Put enough rice water to fill the pot to the 80 percent mark. Rice water is the liquid left over after the rice has been rinsed.
  3. Bring to a boil over medium heat, then reduce heat and simmer for 15 minutes, stirring occasionally.
  4. Let the water naturally cool down to room temperature.
  5. The water should be discarded as soon as you can feel it with your bare fingers, and the temperature is nearing room temperature.
  6. After drying it with a clean cloth, let it air dry entirely for at least one night before using or storing it again.

This pot will need to be seasoned and sealed before use. To be used on gas stove tops, it cannot be used with induction cookers. Hand-wash with mild dish soap in lukewarm water. Make sure the pot is completely dry before storing away. And make sure the bottom of the pot is completely dry before placing it onto the heat to use. Any present moisture on the outer bottom may cause possible cracking when heated.
